43 - Plum Bread
Ingredients
- 450g white bread flour
- pinch of salt
- 125ml warm milk
- 115g melted butter
- 60ml caster sugar
- 15g yeast
- 5ml ground cinnamon & ground allspice
- 2 eggs lightly beaten
- 225g chopped prunes
- 50g seedless raisins
- 50g sultanas
Method
- Sift flour salt together.
- Mix together milk, butter, sugar, eggs.
- Stir into flour, make
a soft dough.
- Turn onto a floured surface knead approx 10
minutes until smooth.
- Then knead in the fruits.
- Leave to prove until double the size.
- Turn out onto floured surface
knock back & knead.
- Lightly grease a 900g loaf tin.
- Cover & leave
in a warm place until double in size.
- Bake in oven 190ºC
Gas mark 5 approx 30-40 minutes.
(If the bread sounds
hollow when tapped then it is cooked)
