Recipes : Class 43 - Plum Bread

Ingredients

  • 450g white bread flour
  • pinch of salt
  • 125ml warm milk
  • 115g melted butter
  • 60ml caster sugar
  • 15g yeast
  • 5ml ground cinnamon & ground allspice
  • 2 eggs lightly beaten
  • 225g chopped prunes
  • 50g seedless raisins
  • 50g sultanas

Method

  1. Sift flour salt together.
  2. Mix together milk, butter, sugar, eggs.
  3. Stir into flour, make a soft dough.
  4. Turn onto a floured surface knead approx 10 minutes until smooth.
  5. Then knead in the fruits.
  6. Leave to prove until double the size.
  7. Turn out onto floured surface knock back & knead.
  8. Lightly grease a 900g loaf tin.
  9. Cover & leave in a warm place until double in size.
  10. Bake in oven 190ºC Gas mark 5 approx 30-40 minutes.
    (If the bread sounds hollow when tapped then it is cooked)
